Gorgonzola, Walnut and Apple Puff Pastry
4 frozen puff pastry cups
3 oz. gorgonzola
1/3 cup heavy cream
1/4 cup toasted walnuts
1/4 Granny Smith apple
Bake puff pastry cups according to package instructions. Whisk heavy cream until it produces soft peaks, and fold in crumbled gorgonzola and chopped, toasted walnuts. Pipe or spoon into warm pastry cups and top with sliced apple.

Easy Goat Cheese Appetizer
Pear, Goat Cheese and Pecan Spinach Salad
1 cup spinach leaves
2 oz. goat cheese
1/4 bosc pear
1/4 toasted pecans
1/4 olive oil
1/4 cup balsamic vinegar
1 tbsp. dijon mustard
salt and pepper
Top spinach leaves with thinly sliced pear, chopped toasted pecans and goat cheese. Very slowly whisk olive oil into balsamic vinegar and finish with mustard and pinches of salt and pepper. Dress salad to taste.

Cavatappi with Hot Italian Sausage Red Sauce
For the sauce:
2 cans crushed tomatoes
2 pounds hot italian sausage
1 pound fresh basil
1 pound fresh parsley
1 medium yellow onion
4 cloves garlic
1 pinch red pepper flakes
1 tbsp. salt
2 tsp. pepper
Saute chopped onion and garlic in olive oil in a large pot over medium-high heat until translucent. Meanwhile, break up sausage in a pan with olive oil over medium-high heat, cooking until browned. Add to onions.
Strain crushed tomatoes through a food mill over the pot, add chopped basil, parsley, red pepper flakes, salt and pepper. Bring to a boil and simmer for an hour and a half. Reserve 1 cup, cool the rest and store in your freezer.
Cook 1/4 cup Cavatappi pasta until al dente, strain and return to pot. Cook with 1 cup sauce for 1 minute until pasta is fully cooked and has absorbed the sauce's flavor. Serve with more basil and parmesan cheese.

Single-Serving Chocolate Lava Cake
1/4 cup semisweet chocolate chips
2 tbsp. butter
1 egg
1 tsp. flour
2 tsp. sugar
1 tsp. vanilla Extract
1 pinch salt
Preheat oven to 350 degrees. Melt chocolate chips with butter in microwave in 30 second intervals. Crack egg into a separate and whisk in sugar, salt and vanilla. Add cooled chocolate and fold in flour. Pour into 4 oz. ramekin and bake for 15 minutes.
